1 sugar cube
(white sugar, or demerara/raw sugar, according to your preference)
2 dashes bitters
¾ oz cognac
champagne

Put the sugar cube on a spoon and soak it with the bitters.
Drop the soaked sugar cube into a champagne flute, then add the cognac.
Fill the glass with champagne.
Looks lovely garnished with lemon peel.
