2 oz gin
3 oz. grapefruit juice
1 tbsp Rosemary simple syrup*
Rosemary sprig, for garnish

1 cup water
1 cup sugar
¼ cup rosemary, stripped from stem
Rosemary Simple Syrup Instructions
Combine the water, sugar, and rosemary in a small saucepan over medium heat.
Bring to a boil while stirring, until the sugar has dissolved.
Remove from heat and let cool to room temperature.
Strain syrup through a fine mesh strainer into a mason jar and store in the refrigerator.
Combine the gin, grapefruit juice, and rosemary simple syrup in a cocktail shaker with ice.
Shake vigorously to combine.
Pour into a highball glass filled with ice.
Top with a splash of club soda and garnish with rosemary sprig.
